CHICKEN CHOW MEIN

I wanted to make this meal for my Mom.  She loves this dish when we order from our local Chinese take out place.  I was even more inspired to try it when I took a cooking class at my local library and they used a wok.  Everything cooked so quickly!  I had to have one of these!  This was my first meal I tried with my new wok and it was amazing.  We will never order out again!  The part of the meal that took the longest was cutting up the chicken into tiny pieces.  If you are a fast slicer, this meal will be done in no time!

Pancake Bites

For the past 5 years, my Mom, 4 sisters and I have been doing a girls weekend once a year.  I remember back to the very first one.  My sister Judy made these pancake bites and filled them with raspberry jam, sprinkled confectioners sugar on them and served them to us.   Well, she couldn't make them fast enough!  Although this breakfast requires a special pan (Nordic Ware Ebelskiver Filled-Pancake Pan), I was lucky enough to receive one as a gift from my sister.  My children were not crazy about the raspberry jam, so I replaced it with fresh blueberries and chocolate chips!  That they loved!  If you are going to make this, I recommend making a few batches before you tell anyone they are ready!  They go fast!

PHILLY CHEESESTEAK

PHILLY CHEESE-STEAK

Looking for a quick easy weeknight meal?  This is it!  Instead of using the stove top, I decided to use my new wok!  It cooks so quickly and it was perfect for this recipe!   I put my steaks in the freezer for at least 30 minutes.  This makes it very easy to slice thin.  The most time you will spend on this meal is slicing 
the steak, pepper and onions.  It cooks so quickly.  When trying a new recipe, you never know how 
it is going to turn out.  My family is always my taste testers!  If they like it, I post it!  There was silence and I was looking around the dinner table and everyone was eating and enjoyin this!  This will be served again very soon!

CHOCOLATE MOLTEN LAVE CAKE


This recipe is for all of the chocolate lovers out there!  I was a little intimidated to try this out.  I have tried it in the past and was not successful!  On this snowy cold Sunday afternoon, my 11 year old son is bored!  He said I want to make a chocolate molten lave cake and I said go for it!  He has been wanting to make this since he saw it on Master Chef Jr.  With very little help from me, he made this delicious dessert that is a chocolate lovers dream!

BUCKWHEAT PANCAKES

 
In trying to get a little healthier this year, I came across a recipe for buckwheat pancakes.  I had to try them!  I made a batch, however I am the only one who liked them!  I think it has to do with the brown color.  They taste similar to regular pancakes, but you eat with your eyes first!  So, since I am the only one who is eating them, I made a batch and ate three, I froze the rest in separate packages with a few raspberries.  This way I did not waste any fresh fruit or mix.  Now when I need a quick, healthy breakfast, just pop them in the toaster and they are ready in minutes!
 
I used a metal cookie cutter to get the heart shape!  Just spray the cookie cutter while in the pan and pour the mix into the cookie cutter.  When ready flip and cook the other side.

These were amazing.  I felt like I went to a fancy bakery and bought these.  While the ingredients were expensive, and this recipe is a little more time consuming than most.  It was well worth it! 
It is chocolatey goodness!  You have to try it!

SAMOAS CUPCAKES

These cupcakes were inspired from my favorite Girl Scout cookie!  The cupcake is light and chocolaty!  The icing is just amazing!  When you take a bite the chocolate cupcake with the icing is so good, then you get the taste of the melted chocolate and the caramel sauce.  Then just a bit of crunch with the coconut flakes!  While this is a little time consuming, it is worth it!  Dazzle your friends with this easy recipe!
