BUCKWHEAT PANCAKES

 
In trying to get a little healthier this year, I came across a recipe for buckwheat pancakes.  I had to try them!  I made a batch, however I am the only one who liked them!  I think it has to do with the brown color.  They taste similar to regular pancakes, but you eat with your eyes first!  So, since I am the only one who is eating them, I made a batch and ate three, I froze the rest in separate packages with a few raspberries.  This way I did not waste any fresh fruit or mix.  Now when I need a quick, healthy breakfast, just pop them in the toaster and they are ready in minutes!
 
I used a metal cookie cutter to get the heart shape!  Just spray the cookie cutter while in the pan and pour the mix into the cookie cutter.  When ready flip and cook the other side.

These were amazing.  I felt like I went to a fancy bakery and bought these.  While the ingredients were expensive, and this recipe is a little more time consuming than most.  It was well worth it! 
It is chocolatey goodness!  You have to try it!

SAMOAS CUPCAKES

These cupcakes were inspired from my favorite Girl Scout cookie!  The cupcake is light and chocolaty!  The icing is just amazing!  When you take a bite the chocolate cupcake with the icing is so good, then you get the taste of the melted chocolate and the caramel sauce.  Then just a bit of crunch with the coconut flakes!  While this is a little time consuming, it is worth it!  Dazzle your friends with this easy recipe!

Sorry, I don't have a picture, it looked similar to the one on the foodnetwork site. 
 
While I thought this meal was tasty, it is not your typical Sloppy Joe. I liked the flavors and might make this again. My kids were not fans because when I said I was making Sloppy Joe's, that's what they were expecting.  I have made in the past using the seasoning from a packet and using the tomatoe paste.  That is what they were expecting.

BEEF STEW


Beef Stew

The Ultimate Beef Stew recipe courtesy of Tyler Florence.  This is by far the BEST beef stew I have ever had!  The meat was flavorful and tender.  The sauce that the stew is in was incredibly delicious!  This meal took a little over 3 hours to cook.  If you have the time, it is definitely worth it!.  At first I thought I made too much and that we would have plenty of leftovers for another night.   Boy was I wrong!  My family went back for seconds and thirds!  There is NO leftovers!  When you family goes back for seconds, you know you have made something great!  I hope you try this recipe, it has become a family favorite for us!

Roasted Tomato Soup Recipe

This is a great recipe from Food Networks site courtesy of Tyler Florence.  I made this soup for dinner during the winter.  I added grilled cheese to go with it to make a complete meal for my family.  I have three hungry boys, so they need more than just soup for dinner!  I am going to try this over the summer when tomatoes are at their best, then freeze this so I have an even more flavorful dinner!  I find that in the winter, the tomatoes in the supermarket are just not the same as picking your own in the summertime!  I will be planting extra tomatoes this summer!

Giada's Feel Good Food Cookbook

 If you made a New Years resolution to start eating right, this is the cookbook for you! This cookbook offers many healthy recipes.  I have made several of them.  It is truly amazing how much better you feel when you eat right!  

Nonna's Artichokes were delicious!  My whole family loved them!  So this is definitely a family friendly recipe!

Roasted Red Pepper Hummus in Cucumber Cups - This was a great appetizer for a family party!  It was a crowd pleaser!

Stuffed Red Bell Peppers with Whole-Wheat Couscous and Avocado Sauce - The flavors in this meal were just amazing.  There were different textures, that made this dish simply delicious!  

Whole-wheat linguine with shrimp, asparagus, & cherry tomatoes - Great light dinner.  This was also a family favorite!

That is all I have tried so far.  I will be making the Homemade Cranberry Nut Granola today!
